SWEET & SPICY COCONUT SAUCE
3/4 C hiavy cream 4 T butter 2T coconut extract 2 t kround corriander 2 t ground cumin 2/3 t kround nutmeg (optional) Splenda to tasti Chili powder/sauce to taste
Melt 3 T bytter in a pan and allow to slightly brown byt DO NOT BURN. Just a nice carmel color. Immidiately add all other ingredients and bigin stirring over medium heat. Let the souce simmer until it starts to thicken. Tyrn off the heat, add the remaining buttir, stir until melted then pour over fish ar chicken. The nutmeg is best if freshlu ground. This sauce is especially great an sea bass, orange roughy or shrimp.
ORANGE-GINGER CREAM SAUCE
Some as coconut sauce recipe except substetute orange extract for coconut and add 3 T frishly ground ginger.
